Date Night!

Surprise Date!

Now I consider myself pretty lucky in love.
I've got a great boyfriend who does everything he can to help provide for us, and to help us grow as a couple.
However we are human.
I think it's human nature to get "comfortable" and to sort of let a lot of that romantic and fussy stuff fall to the side.
Our idea of a date is going to grab a pizza and watching a movie at home.
Which is wonderful, but there aren't any angel choirs singing.

So I about died when I came home from work on Tuesday evening and found that the entire house was sparkling, he had cleaned everything and told me that we were going out.
Imagine my surprise when I found out that we were going to Yellowfin.

Yellowfin Steak and Fish House is right on the water in Annapolis, and it's so gorgeous and I have been wanting to go there for so long!
He had made reservations, and reserved us a waterfront table!

We started off with some bubbly goodness

Look at that view!!

Everything we had was fantastic!
I wish I had taken pictures of our salads, but I'm a bad blogger and forgot.
But I had the hot bacon caprese salad.
omg. bacon.

For Dinner...we spoiled ourselves.
Randy got the scallops in a rich white wine butter sauce, with garlic mashed potatoes and asparagus.

I on the other hand was a little indecisive so I got everything.
I got the lobster tail with a crabcake, and scallops...and shrimp...and garlic mashed potatoes.
BEYOND DELICIOUS.
Everything was so fresh, and cooked delightfully.
The sauces weren't overwhelming but were a perfect compliment to the dish.

All in all the evening was wonderful, and we left stuffed and happy.
I would absolutely recommend the restaurant and would absolutely return!
(once our wallets have recovered)

Strokin...and not the sexy kind!

Okay. I Had A TIA.
Essentially a mini-stroke.
Weird. I know.

It was pretty scary though, I couldn't move the left side of my body and more importantly my face looked like a melted candle. Not Happy.
However, after a week in the hospital and a week recovering at home I regained ALL my strength and mobility back!
I'm a fighter.

Anyway, I'm going to make this post nice and sweet:

Randy was pretty much the best boyfriend ever, he got me picture books and even helped me work on them since my arm was all gimpy.

The Hospital Food...was well...Hospital Food.
I was on a thickened liquid diet, which basically means apple juice and milk that has the consistency of syrup.BARF.
When I was finally allowed to eat, I was given Tuna...now I love Tuna.
What I don't like is warm, old, soggy bread tuna.

Once I was discharged and comfy at my grandparents, I was able to start eating healthy again. My mom even got me out of the house one day and treated me to a Maryland Favorite: CRABCAKE:

It was amazing. Seriously.

I also made sure I had lots of yummy things close by so I could try my best to stay on the right track even while healing.
One of my absolute favorite things to eat is prosciutto, mozzarella, fresh tomato, basil, olive oil, and balsamic vinegar....I can't even handle the amount of goodness that was on this plate!
(On a sidenote...I really love my grandparents bowls, they were super nice to let me crash at their pad while I was a gimp)

Last but not least:
I was feeling well enough to go to an O's game with my love <3 It was a great day even though all the walking did exhaust me.
Now...I totally cheated at the game. I had beers and bbq.
BUT...life is for living and if 90% of what I put in my body is healthy, and 10% is crappy then I feel like I'm doing alright.

Boyfriend Approved

COOKING:
It is difficult for me to cook healthy, while also feeding my 240lb, 6'5 Boyfriend.
He is always starving, or feeling like I'm torturing him with lettuce and other rabbit food.

SOOOOOO.
I did some research.
I decided to make a steak and potato meal.
DONE RIGHT.

Here are the results:

I grilled the steaks with just some salt and pepper lovin.

The Potatoes though...omg. The Potatoes.
I sliced them all fancy like, and then I seasoned them with sage, thyme, rosemary, and paprika and some olive oil.
Let those suckers bake, and then at the last moment I put some asparagus in the oven as well with sea salt and olive oil.

YUM.
Seriously. YUM.

I know those seasonings are all really strong, but trust me when you're dieting strong flavorful food will keep you from being bored!

This was perfection.

And Look....It was boyfriend approved!

And that girls is how you sneak healthy food onto your table without your manlymen knowing!

That doesn't mean however that I didn't have an amazing time this Summer:
Lets Recap!

Thankful Thursday

Thankful Thursday

So I had a rough night with the Mister.
His cousin John returned home from the Middle East, and I understand they wanted to celebrate, but I had to work in the morning, and being kept up till 5:30AM with their ruckus...well it made me not a very happy person.

But then I remembered it's THANKFUL THURSDAY.
And lemme tell ya counting your blessings definitely changes your mood :)

I had Chick-Fil-A breakfast!
I don't care in the slightest that it was bad for me.
It was delicious.

Sushi Exist.
As you can tell from this picture, I'm a little obsessive about Sushi.
So I'm so very thankful that Sushi exist!

So I've been creating my own Iphone cases!
All I did was buy a clear iphone case off Amazon (.80 cents!!)
And then I made these super cute cases using digital scrapbook items!
Now I will never get bored of a case :)
So I'm thankful that God made me creative

So Randy's mother around Christmas saw a sign that had this same saying on it and she had really wanted it, however it was like $50 bucks and I couldn't swing it. I felt really bad, but that is life.
Then this week I was at Hobby Lobby (my favorite store) and I found it for $11 bucks!!
Life is Grand

Went out on the boat this weekend with friends.
So thankful I have an amazing network of friends.

This would be my Pop and my cousins little baby boy.
I am so thankful that my family is so close, and that we get to experience all these wonderful moments together.

Okay so I feel really bad that I didn't update at all this past weekend, and I also feel pretty bad that I didn't do the dresser.
So I promise that I'll do much better this week!

THIS WEEKEND:

I took my BLS Healthcare Provider Course! It was interesting to say the least...but on the plus side I can now save a life :)

Meal Planning.
I've begun planning all our meals out for the month, it saves us a ton of money on groceries and I never have to wonder what I'm going to make when I get home, I know I have all the ingredients and I know that we are getting all our fruits and veggies in!
(except on Steakum night..that is purely a heart attack waiting to happen)

Randy and I had a rough Friday evening, which left us both brooding for a little bit. I decided to go and get sushi, and let me tell you those delicious little fish made me feel instantly better
(and maybe the fact that Randy and I kissed and made up helped as well)
But seriously if you haven't tried Yama Sushi in Annapolis you're missing out!

So a couple months ago my Nana told me about how she tried this recipe called crock pot lasagna, and I had to give it a try myself...unbelievable, it was cheesy delicious goodness!
If you want the recipe just comment below and I'll be glad to post it :)

Our budget has been so tight lately, so I can't get my nails done like I used too, so I've been practicing my self manicure and I have to admit I'm getting better and better each time :D
I'm in love with this OPI color "Italian Love Affair"
It's the perfect baby pink with a touch of peach!
Super Shiny too!

All in all this weekend was relaxing and wonderful, Randy and I don't get too much quality time together so we were really grateful.
And although Randy and I had a couples spat on Friday, I've learned that all couples will fight, its just how you fight and how you make up that make the difference.
I have to say that I'm blessed to have such a wonderful man in my life who has the patience to handle me and gives me all the space I need in order to cool off and regroup.
